Don't know much about chickens or roosters. Grew up in Chicago and Massachusetts. However, it is a pretty rooster!

In the Catskills we had chickens. I used to love watching the chicks hatch and collecting and eating the eggs, too. We had several roosters so I decided to slaughter and cook one. I must say I don't know how farmerrs manage to have an appetite for what they must kill. The smell was awful. And although I stewed the bird it was tough as shoe leather. Never did that again!

Old birds are only used for soup, pixipixil. The young pullets are used as fryers. Yes, they are all smelly when cleaning. The gizzard of the bird is very colorful on the outside, a violet with a bright blue and then creamy white in the middle section. The inside, though, is textured and gray. As a child, I always liked the white meat. My brother always wanted a drum stick. How can farmers eat what they raise? They just do. As a child, though, I did have a nightmare around age eight or so. The "little people" who cared for the chickens were angry with us for killing the birds and were going to "get back at us" by embodying the dead chickens. I vocalized fear and my sister nudged me with her elbow to wake me up! When I left home and went to college I eventually became vegetarian and am vegan (plant-based only) today.

I loved your story vmarie. I can see why you might become a vegan. For several years my son went with a woman who was a vegan. I never got to know her.
My brother married a farmer's daughter. They both went in for science and never went back to farming. They thought they would retire to the farm but as I had warned them, none of the family would be left there by then and I was right.

Respect to you, vmarie! I'm a vegetarian, but am finding to leap to veganism just too hard, I'm afraid: I love cheese and eggs! But only guaranteed free-range eggs from hens who can forage outdoors.

My mother raised chickens, for eggs and the chickens to sell. When she killed them my job was to pluck them. To this day if I buy a whole chicken in the store I am very picky if the pin feathers are still on.

Becoming vegan can be tricky, Jiggler, especially if you delight in dairy. I had done raw foods only for six months at an alternative health food school. In returning to cooked foods, my energy dropped so fast, it hurt. So, I learned that it's important to make changes gradually. I had been vegetarian about 40 years before becoming vegan. I was inspired by President Clinton who had to eat a plant-based diet because of his heart condition. I figured if a guy with his love of fast food and burgers could change to vegan, I certainly could with my vegetarian habit. When you eat lighter, you feel better. There's more energy, less heaviness. A springtime cleansing regime is a good start. A short fast with water and some herbal teas and juices helps clean the tastebuds so you can really taste the fruits and vegetables when you begin eating again. Fasting also helps hone the appetite. There are a nice variety of milks available on the market: soy, coconut, rice, almond, and cashew. Stir-fried, mashed tofu can substitute for scrambled eggs. Discover the culinary herbs--they do wonders for really heightening flavors in food. Sweet basil is my favorite for most vegetables.Cinnamon is a spice that works on most fruit. Summer is a great time to be vegan. Such a diet makes bearing the heat so much easier. Most important: Enjoy what you eat. Don't lay guilt trips on yourself if you're not psychologically prepared for veganism. YOU are the author of your life and have charge of it. Blessings and bon appetite!

Older chickens are not good as fryers. that is why they are sold as pullets.

Thanks! I got quite a bit moved earlier Sunday, but I had a nasty fall on the top of the concrete stairs. I'm not used to my new bifocals and misjudged where the stairs actually were. I felt my heel hit the riser of the stair.

Lovely rooster. I love the color.I saw a similar one running around with it's head cut off once, long, long ago. When I say I am running around like a chicken with its head cut off, I do know of what I speak.

You're right, nlb - there is a reason for the saying "like a chicken with its head cut off" and I've seen it a LOT. Rather messy, don't you know...
