The USA map is always a little challenging because of the pieces in the way they're made, but it's still rather FUN. It makes me reminisce on the days when I learned US geography.
Add 1 ½ cups strawberries and process until nearly smooth. Stir in remaining chopped strawberries.
Pour mixture into popsicle molds and push popsicle sticks about 2/3 of the way into each mold. (I recommend wooden sticks as they tend to grip the mixture better and don't come out when you are trying to un-mold the popsicles.)
Freeze at least 4 hours. To un-mold, run under hot tap water for 20 – 30 seconds then twist stick gently to release.

In central Florida it is currently 86 degrees with a feels like temp of 88. I need to go out and rake leaves (our oaks drop their leaves in February here), so those bars appeal to me. But yeah, I wouldn't want them if it was chilly out.

Those oak trees that drop their leaves in the spring are live oaks. They drop most of their leaves in the spring, as the new leaves are coming out, instead of the fall. Thus, they always look like they are alive, hence the name.
STRAWBERRY CHEESECAKE POPSICLES
INGREDIENTS
8 oz. cream cheese
1 cup whipping cream
1/3 cup powdered Splenda sweetener
¼ tsp. Stevia liquid sweetener
1 tbsp. lemon juice
2 tsp. lemon zest
2 cups fresh strawberries, chopped, divided
