Ingredients
1/2 cup sour cream
2 teaspoons sugar
1 teaspoon white vinegar
1 teaspoon salt
1/2 teaspoon dill weed
4 medium cucumbers, sliced
In a large bowl, combine sour cream, sugar, vinegar, salt and dill.
Add cucumbers; toss to coat. Chill for at least 30 minutes. Yield: 8-10 servings.
You may adjust vinegar and/or sour cream to taste. Don't forget the dill weed.

My mom made a similar salad minus the dill and sugar plus some very thin slivered onions. You have to let the onions and cukes sit with some salt overnight.

Go back to my recipe. I forgot, dang it, that it also needs chopped green onions. Be sure to put them in also! Important!

I call then Danish Cucumbers, because I had them in Denmark.
English seedless cucumbers --- long, thin, usually wrapped in plastic. Sliced paper thin.
Equal parts of vinegar, sugar and water. Start with 1/4 cup of each. Add salt and pepper to taste. Mix and add sliced cucumbers. It could be considered a relish, but I love them so much, it's a vegetable for me!

Cucumbers with thinly sliced onions are great with a ranch dressing covering, chilled.

P.S. I bought one of those strange-looking vegetables at the store. Looks a bit like a squash crossed with a ridged cucumber. Quite bitter--will require steaming and mixing with sweeter vegetables, such as peas and carrots.

That would be a nice poem for my sister. She loves gardening. Tomatoes, beans, lettuce, cucumbers, onions, squash, and all kinds of yummy vegetables. I love her home canned spaghetti sauce and chili. Yummy for my tummy.

Vmarie - I responded to an earlier post about that warty, sorta-cucumber-looking thing:
Once a Vietnamese lady showed me some veggies she'd grown and they look like that. She said they were called 'bitter melon' and gave me some to taste. That tiny bite drew my mouth up and I made a terrible face which made her laugh. I asked her how they ate those things and she said, "They are GOOD for you! " I said yes that I'm sure they are but they were so bitter how could they eat them. She laughed again and said, "They are GOOD for you."
I also grew a garden and she loved the tomatoes but was totally bewildered that you couldn't eat the plants. "Big waste" she would say, but she loved the tomatoes.

Don't care for cucumbers but like all the rest. Just can't have leafy veggies because of kidney stones. I do miss my salads, but as long as it keeps me from getting another kidney stone, I can live with that verdict!
I read somewhere recently that peoples' gardens were raided by the narcotics people because they were growing okra! Apparently, okra leaves look a lot like marijuana leaves (especially from a helicopter). Wow! Unbelievable and a travesty! Dirty deal!
