They're also good stuffed with tuna or chicken salad, almost like you were using it as a dip. Smoked salmon pate works well, too! I use the pepper instead of crackers on canape trays.

Sorry, aussie, and mamag; I know your problem with peppers. aussie, I actually cook as little and as simply as possible. I prefer fresh ingredients for side dishes, but I admit to using frozen entrees to reduce prep time. After 56 years of cooking 3 meals daily, I'm really not interested in cooking any more! Do a lot of steaming on veggies and sometimes, my Dearly Beloved even likes them!

Aknan, totally agree! I, however, have to limit my pepper consumption as I cannot process them well.
Green ones are the only ones I believe I can still eat. I haven't tested them yet, however, for their acidity since I've been having this acid-reflux
problem on a recurring basis.
