I learned recently to make "pizza dough" out of mostly mashed potato with a little flour. No rising agent, no water (except what's in the potatoes). Topped with cheese and what you like, cooked in a heavy skillet, covered, for about 20 min on the stove top. I'm planning to make one with cream cheese and salmon next.
That sounds good, Orinoco. Let us know how the salmon one came out, please.

Aknan, it was delicious! Made it yesterday with herbed cream cheese on the potato crust, then smoked salmon, then sliced goat cheese on top. The base is simply mashed potato with enough flour worked in to make the base, I used about 1.5 cups of flour for 6 palm-sized potatoes. Press it into an oiled, nonstick skillet and top as you like. Cook on low heat, covered for about 20 min on the stove. I'm sure you could bake it as well.
I buy frozen pizza, too, but by the time I finish adding sliced black olives, sliced mushrooms and extra cheese, you can't tell.

I usually add anchovies and mushrooms.

Love anchovies, but my Dearly Beloved doesn't care for them. I've also been known to add chopped red or yellow bell pepper and chopped spinach (he doesn't know he's eating that when it's covered with cheese! )
