After the rain comes the sun and all God's creatures are washed clean. We had an additional 9 inches of snow yesterday. At least you don't have to shovel rain! Hugs.

I'm all for the Witherspoon quote - if a book just isn't interesting (and you don't have to read it for a course), don't waste your time. Go read something else - life is too short for boring books!

I make a cake similar to this using the ladyfingers but the filling is a lovely chocolate mousse.

Oh yes trynfindit, the chocolate mousse cake with the ladyfingers. That is so good. I do wrap a red ribbon around it and top it with chocolate covered strawberries. I only make it for Valentine's day, but this year I did not make it. I was too sick with the shingles. :( I think I'll make it for Easter instead. Thanks for reminding me. :))

Aknan - well I did do some shovelling yesterday with the squeegee, lots of water puddles. The sun is shining brilliantly today, so can take the car out lol. Hugs.

To all the folks who thought this lady-finger cake looked delicious, it reminded me of a recipe I cut from a newspaper or magazine about 20 years ago and have made at least a dozen times to rave reviews. My hubby made it a couple of times, too, and where it says to use "blueberry pie filling" he erred and just bought canned blueberries in water. Too late to go to store and exchange, so we took a chance, drained the blueberries as much as we could, and used 'em. Oh Boy! was it ever good and so much less syrupy and sugary sweet. I'm thinking you can use fresh strawberries with the same delicious result. Good luck!

Blueberry Filling Cake
or — Blueberry Surprise! (Hubby's cake)

Ingredients:

1 pint whipping cream
1 ea. 8-oz. and 2 ea. 3 oz. packaged Philadelphia Cream Cheese, softened
(I get 2 of the 8-oz. pkgs. and have some for stuffed celery)
3/4 cup sugar
4 ea. 3-oz. packages ladyfingers
1 ea. 20-oz. can blueberry pie filling (or just a 20 oz. can of blueberries, drained)
Chopped walnuts

Directions (electric mixer a real necessity):

Whip cream until stiff and set aside.
Beat cream cheese with sugar until smooth.
Fold whipped cream into cream cheese mixture.

Open ladyfingers to separate into single pieces
Stand some pieces to fill sides of a 10-inch Springform pan.
Line bottom with layer of more ladyfingers.

Layer over the top of the ladyfingers lining the bottom of the pan 1/3 of cream mixture.
Layer on top of the cream mixture 1/2 of blueberry pie filling.
Top with another layer of ladyfingers

Repeat layering with another 1/3 of whipped cream mixture
Top with the remaining 1/2 of blueberry filling
Top that with the remaining ladyfingers.

Layer on the remaining 1/3 whipped cream mixture.
Sprinkle with chopped nuts.
Chill several hours.

Makes 12 to 15 servings of one of the most delicious desserts you'll ever eat!
