Looks like my guinea pig's salad! They get 2 large mixed salads per day with leaf lettuces, all the colors of peppers, carrots, tomatoes, spinach, broccoli, parsley, green beans and any other veggies I see each week! Spoiled piggies!
I think that these peppers are all the same - the difference is the amount of time the pepper is left on the vine. At first, the pepper turns green. After a while, they'll turn yellow, then orange, then red. Bell peppers get sweeter as they change colors.
The red peppers have more beta carotene and vitamins A & C. Red bell peppers are also the source of pimentos and paprika.
I had no idea and so I googled it. Capiscum annuum has many varieties, including bell, pimento, paprika, cayenne, etc. It says the spices come from a different variety, but same species. The plants are so pretty and different varieties have differently shaped fruit.

I think you are right, we grow peppers in our garden and they turn colors the longer they are on the vine. I love to use all the colors with onions and summer squash and zucchini on the grill. It is very good! Our garden is coming to an end the leaves are starting to turn. I am not ready for cold weather.
I can so relate to Schweitzer's quote. Some times I get blue and isolate myself. Then someone comes along and cheers me up until I am once again warmed by the flames of friendship and fired up to do something fun.
And of course Frost's quote is very, very true.
