Lol, I was just telling nborchardt that we haven't eaten pecan pie for some time because it's so sweet but that this year I'm doing a pecan pie with a buttermilk and brown sugar custard with the pecans on top to see if it makes a pecan pie that cuts way down on the sweetness.

All three pies made me smile, enjoy them all. I never had a really good pecan pie since CT. Local pie bakers don't seem to have a clue as to how they are supposed to taste. I believe up in CT when I had it, it was made with VT real maple syrup. Pumpkin pie has also gone downhill around here. I have to make my own with sweeten condense milk and just the right amount of spices. :)

Instead of pumpkin pie which has an intense taste, I prefer a squash chiffon pie which is sweeter and lighter.

I make my pumpkin pie from a certain kind of pumpkin (I grew them at one time) that is a kind of 'buckskin' color. Just the right amount of spices make it yummy and not too intense.
Now, about that buttermilk pecan pie...WOW, YUMMY! I don't have the recipe in front of me right now but will post it. It was a really big hit with my family.
My favorite pie is pecan. It is sweet but I don't eat too big of a slice.

Instead of pumpkin pie, I make a squash chiffon pie. The taste is less intense --- a bit sweeter and lighter. It has beaten egg whites which gives it the lightness.

Our Thanksgiving and Christmas pies depend on who's coming to dinner. One of my granddaughter's favorite pies is Key lime pit in an Oreo cookie crust but she won't be able to get back to town for Thanksgiving. We always have pumpkin pie; in fact, I just cleaned and cooked my pumpkin last night, pureed it and froze it in 2 cup bags.
