I made a salad combination of chunks of tomatoes, cubes of Monterey ColbyJack cheese (the two-tone variety) and raspberry vinagrette dressing. I'll be doing that often! Loved it! Some celery might go well with it.
I have the same problem. Fruit is easy but veggies, especially broccoli, cauliflower. very hard. I do end up tossing a lot which is a real shame.

When I buy broccoli or cauliflower, I wrap the stem end in a very damp paper towel, then put it in a plastic bag. The one from the grocery does just fine. I can easily keep the veggie for two weeks, giving me time to eat it at my speed.

You did not say if the bag needs to be tied up to keep the air out?

I simply press the air from the bag and twist it tightly. Using the produce bag from the grocery, it will twist tightly enough that you can wrap it around the produce. You can also use ziploc bags and press the air from them. I figure since I've already got a bag, why use another?
